My cars thermostat is screwed up?

on the gauge on the dashboard, the needle flickers back and forth really fast. it moves about 1 cm left, then 1 cm right really fast. i asked my auto teacher and he told me to change the thermostat. i installed a new thermostat and added some new coolant. i have the same problem.

the weird thing is that when i put the car in neutral, the flickering stops

auto teacher is wrong. Thermostat gauge is electrical. The wire going to it from the sensor on the block is partially bared someplace so it grounds out or the power to the sender is shorting out or cutting out due to an internal break in the wire is much more logical.

As it only happens when the engine is under load(in gear) meaning that the engine twists on the rubber motor mounts that little bit to hold the electrical wire against other metal somewhere as the engine vibrates.

I am apt to check the wires first for it is the easiest thing to do(or downright cut off the old line and string a new line from the sensor to the gauge.

Sounds like coolant temp sensor is faulting.
Change coolant temp sensor
it sounds like a wire short to engine ground /check the wires out around engine when you put it gear the engine moves and if there is bare wire it could short out at times and could make temp gauge fluxuate
that sounds like the temperature sending unit acting up. it should be located on the top of the intake. a thermostat would,nt act like that.
